  1. Take 4 cups rice
  2. Make ready Smoked mackerel fish
  3. Prepare 3 tablespoons ground crayfish
  4. Make ready 2 stock cubes
  5. Make ready Dry shrimps
  6. Make ready 1 medium sized onion
  7. Prepare 6 seeds of tomatoes
  8. Get Fresh pepper to your taste
  9. Prepare 1 cup palm oil

When I first wrote this recipe on the blog, it was totally unplanned. I woke up one day and made a quick early morning craving. And my answer was Palm oil rice. Palm oil rice is even more delicious than Jollof rice.

Steps to make Palm oil rice:
  1. Firstly, wash your rice with salt and set aside
  2. When the is almost done. Add your smoked fish and dry shrimps. Cover the lid and leave to simmer for about 3-4mins.
  3. Place a pot on fire, add your oil. Heat up a bit and add your onion. Stir fry till it's translucent and pour in your pepper and tomato mix. Stir fry for about 10-15 and add about 3 -4 cups of water. Add your salt, stock cubes, grounded crayfish. Cover and bring to a boil
  4. Stir in your rice. Cover the lid and cook On a medium heat till it's soft to your satisfaction. You can choose to add more water if you feel the rice is still hard.
  5. Stir together and then add your sliced scent leaves, stir together and turn of the heat. Your delicious palm oil rice is ready. Enjoy 😊😍😍.
  6. NB: asking if just didn't season the fish. Yes I didn't cause the fish Already has its own taste plus I didn't want it scattering while stirring the rice hence my reason for add it when the rice was almost cooked.

And my answer was Palm oil rice. Palm oil rice is even more delicious than Jollof rice. I know, I know; to you it may sound crazy to say that. But with Palm oil rice, the time frame for cooking is way easier than the regular Jollof rice. Palm oil rice is a very fast meal and very tasty.
