The ingredients needed to make Breakfast Enchiladas:
  1. Get 1 lb sausage (I used chorizo)
  2. Take 2 cup shredded cheeze
  3. Take 8 each flour tortillas
  4. Take 6 eggs
  5. Prepare 1 tbsp all-purpose flour
  6. Get 2 cup half n half
  7. Take 1/2 tsp salt
  8. Prepare 3 oz cooked bacon
Instructions to make Breakfast Enchiladas:
  1. Brown sausage over med-high heat. Drain fat.
  2. Cook bacon to desired crispness and crumble.
  3. In lg bowl stir together sausage, 1 cup cheese, & half of the bacon.
  4. Fill tortillas, roll and place in sprayed 9 x 13" baking dish.
  5. In lg bowl, beat eggs, flour, & salt. Mix in half n half. Pour over rolled tortillas. Sprinkle remaining cheese & bacon bits over it.
  6. Place in 350° oven & cover with foil, bake for 35 min. Remove foil and bake another 10 min or until cheese is melted. Enjoy!
