  11. Prepare 1 1/2 cups potatoes, cut into chunks
  12. Get 1/2-1 cup carrot tops, chopped

  1. Heat the oil in a pan (with a lid for later). Add the cumin seeds.
  2. When the cumin seeds start to pop, add the onion. Cook until the onion softens.
  3. Add the garlic, ginger, chilli and spices. Season. Cook for a few minutes.
  4. Add the potatoes and most of the carrot tops. And 1 cup of water. Stir well. Put the lid on and simmer for about 10 mins. Add more water if it starts to dry out.
  5. Add the carrots and 1/4 cup of water. Cover again and cook for 3-5 minutes until everything is tender.
  6. Take off the heat. Stir in a tsp more ghee/ butter and the spinach and the rest of the carrot tops.
  7. Serve with a garnish of chilli/ coriander leaves/ more carrot tops 🥕 Enjoy 😋
