  1. Prepare 4 eggs medium
  2. Get 450 g Zucchini / 16 oz.
  3. Make ready 225 g lean gammon steak / 8 oz.
  4. Get ½ teaspoon black pepper ground
  5. Get 1 teaspoon salt ground crystals
  6. Make ready 1 teaspoon oregano dried

Halfway through push the zucchini to one side of the pan and tilt it so the water that has been produced tips to the edge. Remove the water with kitchen paper.
  2. Whilst the zucchini is cooking microwave the gammon steak for 2 minutes and then chop into small cubes, add to the zucchini.
  3. Sprinkle over the pepper, salt and oregano and stir to mix.
  4. Make gaps in the zucchini ham mix to create pockets and crack the eggs in these pockets. Scramble the egg whites into the mix without breaking the yolks. When the whites are firm break the yolks add scramble these into the mix. As soon as the yolk is set serve on warm plates.
  5. Here is the tomato version!
