This is what I would call County Sausage. I will soak my beans overnight and precook them before making the soup. However, I find canned beans to work. These sausages are not cooked and must be refrigerated.

  7. At the end add the ricotta and stir in the mix
  8. Serve on top of the pasta or mix the pasta in a large bowl a nnd add a little grated Parmesan cheese to finish.
