The ingredients needed to make Chorizo Pasta:
  1. Make ready Pasta (whichever you like, I used homemade fettucine)
  2. Make ready 200 g flour
  3. Prepare 2 eggs
  4. Prepare Sauce
  5. Take 1 onion
  6. Prepare 1 tbsp tomato paste
  7. Make ready 100 ml dry red wine
  8. Take 200 g chorizo
  9. Take 400 g canned (crushed) tomatoes
  10. Prepare Seasoning
  11. Get Freshly grated parmesan
  12. Get Fresh parsley
Instructions to make Chorizo Pasta:
  1. Make fresh pasta (or alternatively use store bought pasta)
  2. Dice the onion, cut the chorizo in 1cm slices
  3. Heat a pan on medium heat with some olive oil, once hot fry the onions for about 6-8 minutes
  4. Add the tomato paste to the onion and mix, fry for another minute
  5. Add the chorizo slices and fry for 3-5 minutes
  6. Add the red wine to deglaze. Let it boil then turn down the heat to a simmer, until the red wine is completely evaporated
  7. Add the crushed tomatoes to the pan and let simmer for about 20 minutes. Add salt and pepper to taste
  8. Cook the pasta just before it's al dente (about one minute cooking time left), time it so that this will be when the tomatoes in the sauce have been simmering for about 20 minutes
  9. Add the pasta to the sauce, add a bit of pasta water so the sauce sticks to the pasta. Mix it up and cook for another minute (until the pasta is cooked perfectly al dente)
  10. Serve with freshly grated parmesan cheese and fresh parsley!
