Steps to make Malabar Chicken Korma:
Marinate chicken with little salt and lemon juice for an hour. Meanwhile grate coconut and coarsely grind it.Make a paste of sesame or poppy seeds,aniseed,fresh cream or malai, tomato puree,ginger garlic paste.
Mix all and set aside.
Dry roast 1 dry red chilli and set aside.Heat oil in a wok.Sprinkle half crushed cardamom,cinnamon and cloves and mustard seeds.When they splutter,add the chopped onion and fry golden brown.
Add the chicken and toss.Also add the ground paste,salt to taste,turmeric and chilli powder.Add kitchen king masala or 1 tsp dhaniya and jeera powder.Toss all and add water.Cover and let it cook on low flame.
Sprinkle fried curry leaves and toss till masala coats chicken.Garnish with dry roasted red chilli,curry leaves and chopped coriander.Serve with appam, rice or any Indian flat bread.
