  17. Prepare 1/2 Cup Cooking oil
  18. Make ready 2 medium Pyaz (Onion) sliced
  19. Get ½ tsp Sabut kali mirch (Black peppercorns)
  20. Make ready 6-7 Laung (Cloves)
  21. Make ready 1 tbs Zeera (Cumin seeds)
  22. Make ready 1 tbs Lal mirch powder (Red chilli powder) or to taste
  23. Take ½ tbs Haldee powder (Turmeric powder)
  24. Make ready 1 & ½ tbs Dhania powder (Coriander powder)
  25. Make ready 1 tsp Garam masala powder
  26. Take 2 tsp Namak (Salt) or to taste
  27. Take 3 tbs Lemon juice
  28. Take 1/4 Cup Hara dhania (Fresh coriander)
  29. Prepare 750 g Chicken

  31. Prepare 7-8 Aloo bukhara (Dried plum)
  32. Make ready 1/2 Cup Dahi (Yogurt) whisked
  33. Take 1-2 tbs Pyaz (Onion) fried
  34. Prepare 1-2 tbs Podina (Mint leaves)
  35. Take 1-2 tbs Hara dhania (Fresh coriander)
  36. Get 2 tbs Water
  37. Take ½ tbs Kewra water
  38. Make ready 1/4 tsp Zarda ka rang (Yellow food color)
  39. Prepare 1 & ½ tbs Ghee

Chicken biryani is a simple and super flavourful one-pot meal that is best served with raita and salad. There is a reason why chicken biryani is the most ordered dish in India since the last few years! But why order it when you can make flavourful and delectable restaurant-style biryani at home? Traditional chicken biryani is made by layering marinated chicken and then layered with parboiled rice, herbs,saffron milk & then ghee.

Instructions to make Chicken Biryani:
  1. In a bowl,add rice,water,wash thoroughly and soak for 30 minutes then strain soaked rice.
  2. In a pot,add water,cinnamon sticks,star anise,bay leaves,salt,green cardamom,green chillies,vinegar, mix well and bring it to boil.
  3. Add rice and boil until 3/4th done (8-10 minutes) then strain & set aside.
  4. In a chopper,add tomatoes,garlic,ginger,green chillies and chop well to make a paste & set aside.
  5. In a bowl,add nutmeg & mace powder,fennel seeds,clove podwer,mix well & set aside.
  6. In a pot,add cooking oil,onions and fry until light golden.
  7. Add black peppercorns,cloves,cumin seeds and mix well.
  8. Now add tomato & chillies paste,red chilli powder,turmeric powder,coriander powder,garam masala powder, salt,lemon juice,mix well and cook for 2-3 minutes.
  9. Add fresh coriander and mix well. - - Add chicken and mix well until changes color.
  10. Add dried plums,yogurt,mix well and cook for 18-20 minutes & until oil separates.
  11. Take out half quantity of chicken gravy in a bowl for layering.
  12. In a pot,add fried onion,mint leaves,fresh coriander,half quantity of prepared spice mix,half quantity of 3/4th boiled rice,fried onion,mint leaves,fresh coriander,remaining spice mix,reserved chicken gravy and remaining boiled rice.
  13. In water,add kewra water,yellow food color and mix well.
  14. In a pot,add dissolve food color,ghee,cover and steam cook on low flame for 12-15 minutes & serve!
